Recipe for Red Guinness parfait

  • 50g white sugar
  • 3 egg yolks
  • 80ml Guinness beer
  • 190ml pouring cream
  • Scraped seeds of 1/4 vanilla bean
  1. Boil the Guinness beer down to about half of what it was.
  2. Bring sugar and 25ml water to the boil in a small saucepan, stirring to dissolve sugar, then cook until syrup reaches 118°C on a sugar thermometer (10-15 minutes). 
  3. Meanwhile, whisk yolks in an electric mixer until tripled in volume (6-8 minutes). 
  4. Gradually pour syrup onto yolks, whisking continuously until cool (12-15 minutes). Whisk cream and vanilla seeds in a bowl to soft peaks and fold through Guinness beer. 
  5. Fold in yolk mixture, transfer to the silicone moulds and freeze them.
